The three size tiers

Every home stand mixer we review falls into one of three practical size tiers. Capacity figures below are approximate and drawn from the manufacturers' own published specs.

Tilt-head vs. bowl-lift: the tradeoff

Tilt-head mixers tip the motor head back so you can swap the bowl and attachments easily. They're lighter, shorter (they usually fit under standard cabinets), and ideal up to about a 5–5.5-quart bowl. The tradeoff: with stiff or large bread doughs they can flex or "walk" across the counter.

Bowl-lift mixers clamp the bowl to a lever arm that raises it into a fixed head. That extra rigidity and motor headroom is why they're the choice for 6-quart-and-up bowls, dense doughs, and repeated large batches — at the cost of more height, weight, and counter space. Ankarsrum's rotating-bowl design is a third approach built specifically around high-capacity dough.

How these numbers are set

This tool is guidance, not a precise measurement. Bowl sizes come from each model's product listing, and the capacity ranges come from the manufacturers' own published specifications:

  • KitchenAid publishes that its bowl-lift mixers (5–7 qt) mix 9–14 dozen cookies, and that the 6-quart bowl handles up to about 14 cups of flour; its tilt-head mixers use smaller 3.5–5-quart bowls for lighter batches.
  • Ankarsrum publishes that its 7-litre bowl handles up to about 5 kg (11 lb) of dough.
